MEXICAN RICE

Ingredients:

  • 1 Onion

  • 1 Carrot

  • 2 Cloves Garlic

  • 2 Tomatos

  • 1 Fresh Chilli

  • 2oz / 60g Peas

  • 2oz / 60g Sweet Corn

  • 12oz 340g Rice

  • Chicken Stock (500ml)

  • 1tsp Cumins

  • 1tsp Chilli Powder

  • 2tbsp Chopped Cilantro

  • Salt and Pepper 

  1. Finely chop onion, garlicchilli and tomatoes.

  2. Lightly cook rice with some oil in a pan for a few minutes.

  3. Add chopped onion, garlic, chilli and tomatoes and mix together.

  4. Add chicken stockcarrots, peas, sweet corn, cumin, chilli powder and cilantro, mix together.

  5. Season with salt and pepper.

  6. Bring to the boil and then simmer for about 8 mins or until rice is cooked.
