ENGLISH CHRISTMAS CAKE
Ingredients:

1lb 2oz / 510g Currents

8oz / 225g Raisins

8oz / 225g Sultanas

4oz / 110g Mixed Peel

6oz / 170g Chopped Cherries

10oz / 280g Flour
-
10oz / 280g Butter

10oz / 280g Dark Sugar

Lemon Rind Grated

1tsp Cinnamon
-
1tsp Mixed Spice*
-
6 Eggs
-
3tbsp Brandy
-
Pinch of Salt
-
Marzipan (Almond Paste)

Soft Icing

* (English) Mixed Space is made from equal quantities of cinnamon, coriander seed, caraway, nutmeg, ginger, cloves, allspice and mace.

​Make a few week / months before Christmas.

Mix all the dry ingredients together well in a bowl.

Mix butter, sugar and lemon rind together until fluffy, then add eggs.

Mix this and the dry ingredients together.

Finally add brandy.

Add to 9 inch / 23cm cake tin.

Cook in oven at 300ËšF for 4 hours.

Store until a few weeks before Christmas.

Cover cake, sides and top, with marzipan.

The following day cover the cake, sides and top, with soft icing.
