CHINESE CASHEW CHICKEN

Ingredients:

  • 1lb / 450g Boneless Chicken Chopped

  • 1 ½ oz / 40g Cashew Nuts

  • 3 Garlic Cloves

  • 1 Bunch Spring Onions chopped

  • 2fl oz / 60ml Water

  • 2tbsp Rice Vinegar

  • 2tbsp Corn Starch

  • 4tbsp Hoisin Sauce

  • 1tbsp Soy Sauce

  • Salt and Pepper

  1. Toast cashew nuts in a medium over (350ºF) for about 5 minutes.

  2. Mix together the water, corn starch, hoisin sauce, rice vinegar and soy sauce.

  3. Cook the chicken in a wok seasoned with salt and pepper.

  4. Add garlic, cashew nuts and spring onions.

  5. Add sauce and cook thoroughly.
