CHINESE CASHEW CHICKEN
Ingredients:

1lb / 450g Boneless Chicken Chopped

1 ½ oz / 40g Cashew Nuts

3 Garlic Cloves

1 Bunch Spring Onions chopped

2fl oz / 60ml Water

2tbsp Rice Vinegar
-
2tbsp Corn Starch
-
4tbsp Hoisin Sauce
-
1tbsp Soy Sauce
-
Salt and Pepper
-
Toast cashew nuts in a medium over (350ºF) for about 5 minutes.

Mix together the water, corn starch, hoisin sauce, rice vinegar and soy sauce.

Cook the chicken in a wok seasoned with salt and pepper.

Add garlic, cashew nuts and spring onions.

Add sauce and cook thoroughly.
